Ingredients

  • 1 cup almond meal
  • 1 cup unsweetened shredded coconut
  • 0.5 cup coconut sugar

  • 0.5 teaspoon baking soda
  • 1 tablespoon boiling water
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond meal, unsweetened shredded coconut, coconut sugar, and salt. Stir to mix well.

Step 3

In a small saucepan, melt the coconut oil over low heat. Once melted, add the honey and vanilla extract. Stir until well combined.

In a small bowl, dissolve the baking soda in the boiling water and add to the saucepan with the melted mixture, stirring quickly.
