  • 2 tablespoons Coconut oil

  • 1 medium, diced Tomato
  • 1 teaspoon, grated Fresh ginger
  • 2 minced Garlic cloves
  • 0.5 teaspoon Turmeric powder
  • 1.5 teaspoons Coriander powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon or to taste Sea salt
  • 1 cup Water
  • 2 tablespoons, chopped Fresh cilantro

Directions

Step 1

Peel the sweet potatoes and dice them into small, equal-sized cubes.

Step 2

Heat the coconut oil in a deep pan over medium heat. Once hot, add the cumin seeds and mustard seeds.

Step 3

Sauté the seeds until they start to splutter, then add the finely chopped onion to the pan.

Cook the onion until it becomes translucent, about 5 minutes.

Add the minced garlic and grated ginger to the pan, and sauté for an additional 2 minutes until fragrant.

Stir in the diced tomato, and cook until the tomatoes become soft and pulpy, about 4 minutes.
