Start by making almond milk: Soak 1 cup of raw almonds in water for at least 8 hours or overnight.
Drain and rinse the soaked almonds. In a high-speed blender, combine almonds with 4 cups of fresh water.
Blend on high speed for 2-3 minutes until creamy and smooth.
Strain the almond milk through a nut milk bag or a fine-mesh sieve lined with cheesecloth into a bowl. Squeeze out as much liquid as possible. Set aside the almond milk.
In a saucepan, combine the cinnamon stick, whole cloves, cardamom pods, black peppercorns, sliced ginger, and star anise.
