Ingredients

  • 1 cup almond flour
  • 0.25 cup unsweetened cacao powder
  • 0.5 cup vanilla protein powder (paleo friendly)
  • 0.5 cup almond butter (unsweetened and unsalted)
  • 0.25 cup honey
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt
  • 0.5 cup dark chocolate chips (paleo friendly)

Directions

Step 1

In a large mixing bowl, combine almond flour, unsweetened cacao powder, vanilla protein powder, and sea salt.

Step 2

In a small saucepan over low heat, melt the coconut oil. Once melted, remove from heat and stir in almond butter, honey, and vanilla extract until well combined.

Step 3

Pour the wet mixture over the dry ingredients in the large mixing bowl. Stir until everything is evenly mixed, and a firm dough forms.

Step 4

Fold in the dark chocolate chips until they're evenly distributed throughout the dough.

Step 5

Scoop out about a tablespoon of dough and roll it into a ball with your hands. Repeat until all dough is used.

Step 6

Place the bites on a baking sheet lined with parchment paper or a silicone mat and refrigerate for at least 30 minutes to set.

Step 7

Store in an airtight container in the refrigerator for up to two weeks or in the freezer for up to two months.
