  • 0.25 cup coconut flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 large eggs
  • 0.5 cup honey
  • 1 teaspoon vanilla extract
  • 0.25 cup coconut oil, melted
  • 0.5 cup almonds, chopped
  • 0.5 cup chocolate chips (optional, dairy-free for strict Paleo)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

Step 2

In a medium bowl, whisk together the almond flour, coconut flour, baking soda, and salt.

Step 3

In a separate mixing bowl, beat the eggs until frothy. Add honey, vanilla extract, and melted coconut oil, mixing until well combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring until thoroughly mixed and no visible flour remains.

Step 5

Fold in the chopped almonds and chocolate chips, if using.

Step 6

Transfer the mixture to the prepared baking pan, spreading evenly with a spatula.

Step 7

Bake in the preheated oven for 18-22 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.

Step 8

Allow the bars to cool completely in the pan before lifting out and cutting into squares.

Step 9

Store the almond bars in an airtight container at room temperature for up to 1 week, or refrigerate for longer freshness.
