Ingredients

  • 500 grams Fresh spinach
  • 1 large, finely chopped Onion
  • 1 medium, finely chopped Tomato
  • 4 cloves, minced Garlic
  • 1 inch piece, minced Ginger
  • 2 small, finely chopped Green chilies
  • 1 teaspoon Garam masala
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon or to taste Salt
  • 2 tablespoons Ghee or oil
  • 0.5 cup Water

Directions

Step 1

Wash the spinach thoroughly under running water to remove any grit.

Step 2

Bring a large pot of water to a boil and add the spinach leaves. Blanch for 2-3 minutes until the leaves wilt.

Step 3

Remove the spinach from the hot water and immediately transfer it to ice-cold water to retain the color. Drain and puree the spinach in a blender until smooth, then set aside.

Step 4

Heat ghee or oil in a large pan over medium heat. Add cumin seeds and let them sputter for a few seconds.

Step 5

Add the finely chopped onions and sauté until they turn golden brown.

Step 6

Stir in the ginger, garlic, and green chilies, cooking for another 2 minutes until the raw smell disappears.

Add the chopped tomato, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes turn soft and oil starts separating from the masala.
