Ingredients

  • 500 grams Fresh spinach leaves
  • 2 tablespoons Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 2 Dry red chilies
  • 1 medium Onion
  • 2 Garlic cloves
  • 2 Green chilies
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 2 tablespoons Grated coconut (optional)
  • 1 tablespoon Lemon juice

Directions

Step 1

Wash the fresh spinach leaves thoroughly under running water to remove any dirt. Drain well and chop them coarsely. Set aside.

Step 2

Peel and finely chop the onion and garlic cloves. Slit the green chilies lengthwise.

Step 3

Heat the oil in a large saucepan over medium heat. Add mustard seeds and let them splutter.

Add cumin seeds and dry red chilies to the pan, sauté for a few seconds until the cumin seeds turn fragrant.

Stir in the chopped onions, green chilies, and garlic. Cook until the onions turn translucent.

Add the chopped spinach leaves to the saucepan and stir well.

Sprinkle turmeric powder and salt over the spinach. Mix thoroughly.

Cover the saucepan with a lid and let the spinach cook for about 5-7 minutes, stirring occasionally, until soft and well cooked.

If using grated coconut, add it to the cooked spinach and stir until combined.
