Ingredients

  • 500 grams Rice noodles
  • 250 grams Shrimp
  • 100 grams Pork rind (chicharon), crushed
  • 3 pieces Hard-boiled eggs, sliced
  • 1 bunch Green onions, chopped
  • 5 cloves Garlic, minced
  • 1 tablespoon Annatto powder
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Fish sauce
  • 0.5 teaspoon Ground black pepper
  • 4 cups Water
  • 2 pieces Lemon or calamansi, sliced
  • 1 piece Shrimp broth cube
  • 2 tablespoons Cooking oil

Directions

Step 1

Soak the rice noodles in warm water for 15 to 20 minutes until soft. Drain and set aside.

Step 2

Peel and devein the shrimp, saving the shells. Set the shrimp aside.

Step 3

In a pot, bring 4 cups of water to a boil. Add the shrimp shells and a shrimp broth cube, simmer for 15 minutes to extract flavor. Strain, discard shells, and reserve the broth.

Step 4

In a large pan, heat 2 tablespoons of cooking oil over medium heat. Sauté the minced garlic until golden brown, then add the shrimp and cook until pink. Remove and set the shrimp aside.

Step 5

To the same pan, add the annatto powder, flour, and fish sauce. Stir to form a paste.

Gradually add the reserved shrimp broth while stirring consistently to create a smooth sauce.

Step 7

Continue cooking the sauce until it thickens, about 5 to 7 minutes. Adjust seasoning with ground black pepper.

In a large pot, bring water to a boil. Cook the drained rice noodles for 2 to 3 minutes. Drain and place on a serving platter.

Step 9

Pour the shrimp sauce evenly over the noodles.

Step 10

Top with cooked shrimps, crushed pork rind, sliced hard-boiled eggs, and chopped green onions.

Step 11

Serve with lemon or calamansi slices on the side.
