Ingredients

  • 500 grams potatoes
  • 3 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 0.5 teaspoon garam masala
  • 1 teaspoon salt
  • 1 medium tomato, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 100 milliliters water

Directions

Step 1

Wash, peel, and dice the potatoes into bite-sized cubes.

Step 2

Heat the vegetable oil in a large skillet or pan over medium heat.

Step 3

Add the cumin seeds to the hot oil and let them sizzle for 20-30 seconds until aromatic.

Step 4

Add the finely chopped onion and sauté for 3-4 minutes until golden brown.

Step 5

Stir in the minced garlic and ginger, and cook for another minute until fragrant.

Step 6

Add the coriander powder, turmeric powder, red chili powder, and salt. Stir to combine, allowing the spices to cook for 30 seconds.

Step 7

Add the diced potatoes to the pan and toss them gently to coat them with the spice mixture.

Step 8

Add the chopped tomato and 100 milliliters of water. Stir well.

Step 9

Cover the pan with a lid and let the potatoes cook on low heat for 15-20 minutes, stirring occasionally to prevent sticking. Add more water if necessary.

Step 10

Once the potatoes are tender and the water has mostly evaporated, sprinkle the garam masala and chopped cilantro over the top.

Step 11

Give the potatoes a final stir, adjust seasoning if needed, and remove from heat.

Step 12

Serve hot as a side dish with roti, naan, or rice.
