Ingredients

  • 12 oz Penne or fusilli pasta
  • 1 cup Cherry tomatoes, halved
  • 1 medium Red bell pepper, diced
  • 1 medium Zucchini, sliced into half-moons
  • 1 small Eggplant, diced
  • 4 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Fresh basil pesto
  • 8 oz Fresh mozzarella, torn into small pieces
  • 0.25 cup Parmesan, grated
  • 6 leaves Fresh basil leaves, for garnish

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Spread the cherry tomatoes, red bell pepper, zucchini, and eggplant on a large baking sheet. Drizzle with 2 tablespoons of olive oil and sprinkle with salt and pepper. Toss to coat evenly.

Step 3

Roast the vegetables in the oven for 20 minutes, stirring halfway through, until they are tender and slightly caramelized.

Step 4

While the vegetables are roasting, cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

In a large skillet or saucepan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the cooked pasta to the skillet along with the roasted vegetables and toss to combine.

Add the basil pesto to the skillet, stirring it into the pasta and vegetables until evenly coated. If the mixture seems too thick, add the reserved pasta water a little at a time until the desired consistency is achieved.

Add the fresh mozzarella pieces and gently toss them into the hot pasta, allowing them to soften and melt slightly.
