Ingredients

  • 4 slices day-old bread (brioche or French loaf preferred)
  • 2 large eggs
  • 120 ml whole milk
  • 60 ml heavy cream
  • 30 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 15 grams unsalted butter
  • 10 grams powdered sugar (for garnish)
  • 100 grams fresh berries (optional, for garnish)
  • 60 ml maple syrup (optional, for serving)

Directions

Step 1

In a medium-sized mixing bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, and ground cinnamon until smooth and well combined.

Step 2

Pour the mixture into a shallow dish, such as a pie plate, to make it easier to dip the bread slices.

Step 3

Take the day-old bread slices and dip them into the custard mixture one at a time, allowing each side to soak for about 15-20 seconds. Be sure the bread is fully coated but not overly saturated to prevent it from falling apart.

Step 4

Heat a large non-stick skillet or griddle over medium heat and add the unsalted butter. Allow it to melt and coat the pan evenly.

Step 5

Place the soaked bread slices onto the skillet. Cook for about 3-4 minutes on each side, or until golden brown and lightly crisp on the edges. Adjust the heat as necessary to avoid burning.

Step 6

Remove the cooked Pain Perdu from the skillet and transfer to serving plates.

Step 7

Dust the top of each slice with powdered sugar and garnish with fresh berries if desired.

Step 8

Serve warm with a drizzle of maple syrup on the side, if preferred. Enjoy your delightful Pain Perdu!
