Ingredients

  • 2 lbs Sweet potatoes (Haitian or white-fleshed variety preferred)
  • 2 cups Coconut milk
  • 1 cup Evaporated milk
  • 1 cup Condensed milk
  • 1 cup Brown sugar
  • 4 tbsp Butter (melted)
  • 1 tsp Ground nutmeg
  • 1 tsp Ground cinnamon
  • 1 tbsp Vanilla extract
  • 1 tbsp Fresh ginger (grated)
  • 0.5 cup Raisins
  • 0.5 tsp Salt

Directions

Step 1

Preheat your oven to 350°F (180°C). Grease a 9x13-inch baking dish with butter and set it aside.

Step 2

Peel and grate the sweet potatoes using a box grater or a food processor with a grating attachment. Place the grated sweet potatoes in a large mixing bowl.

Step 3

In a separate bowl, whisk together the coconut milk, evaporated milk, condensed milk, melted butter, brown sugar, ground nutmeg, ground cinnamon, vanilla extract, grated ginger, and salt until the mixture is smooth and well combined.

Step 4

Pour the milk mixture over the grated sweet potatoes and mix thoroughly to ensure all the sweet potato is coated and evenly combined.

Step 5

Fold the raisins into the sweet potato mixture, ensuring they are distributed evenly.

Step 6

Pour the mixture into the prepared baking dish and smooth the top with a spatula.

Step 7

Place the dish in the preheated oven and bake for 1 hour and 30 minutes, or until the top is golden brown and the pudding is set.

Step 8

Remove the Pain Patate from the oven and allow it to cool for at least 20-30 minutes before slicing and serving. This will help it firm up further.

Step 9

Serve warm or at room temperature, on its own or with a dollop of whipped cream for added decadence.
