Ingredients

  • 2 pieces (about 1 pound total) Chicken breast
  • 3 cups Fresh broccoli florets
  • 1 can (10.5 ounces) Cream of chicken soup
  • 1 cup Mayonnaise
  • 1 tablespoon Lemon juice
  • 1 cup Shredded cheddar cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Bread crumbs
  • 2 tablespoons (melted) Butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with nonstick spray or butter.

Step 2

Bring a pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and set aside.

Step 3

Cook the chicken breasts in another pot of boiling water or sauté in a skillet until fully cooked and no longer pink in the center (about 10-12 minutes for boiling). Let the chicken cool slightly, then shred or dice it into bite-sized pieces.
