Ingredients

  • 1 pound fresh green beans
  • 2 tablespoons olive oil
  • 2 cloves fresh garlic, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon unsalted butter
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper, freshly cracked
  • 2 tablespoons toasted almond slices (optional)

Directions

Step 1

Wash and trim the green beans, removing the stem ends.

Step 2

Bring a large pot of water to a boil and add a generous pinch of salt.

Step 3

Blanch the green beans in the boiling water for 2-3 minutes, until bright green and tender-crisp. Drain and immediately transfer them to a bowl of ice water to stop the cooking. Drain the beans again and set aside.

Step 4

In a large skillet, heat the olive oil over medium heat.

Step 5

Add the minced garlic to the skillet and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 6

Add the blanched green beans to the skillet and toss to coat them in the garlic-infused oil.

Step 7

Stir in the lemon zest, lemon juice, and butter. Cook for another 2-3 minutes, tossing frequently, until the green beans are heated through and well coated.

Step 8

Season with kosher salt and freshly cracked black pepper to taste.

Step 9

If desired, sprinkle the toasted almond slices over the green beans for added crunch and flavor.

Step 10

Serve immediately as a side dish and enjoy!
