Ingredients

  • 1 cup dry green or brown lentils
  • 3 cups water
  • 1 teaspoon salt
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 0.25 cup red onion, finely chopped
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon black pepper
  • 0.5 cup feta cheese, crumbled (optional)

Directions

Step 1

Rinse the lentils thoroughly under cold water using a fine mesh sieve.

Step 2

In a medium pot, combine the lentils, water, and 1/2 teaspoon of salt. Bring to a boil over medium-high heat.

Step 3

Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender but not mushy.

Drain the cooked lentils and allow them to cool to room temperature.

While the lentils are cooling, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion, parsley, and mint.
