  • 1 cup Guinness beer
  • 4 cups chicken stock
  • 2 tbsp tomato paste
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped (optional garnish)

Directions

Step 1

Season the cubed pork shoulder with salt, black pepper, and coat with the flour.

Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Sear the pork cubes in batches until browned on all sides. Remove the pork and set aside.
