Ingredients

  • 2 tablespoons vegetable oil
  • 4 large garlic cloves
  • 3 whole bird's eye chilies
  • 500 grams ground chicken (or pork)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons fish sauce
  • 1 teaspoon brown sugar
  • 2 tablespoons water
  • 1 cup holy basil leaves
  • 4 servings jasmine rice (cooked)
  • 4 large eggs

Directions

Step 1

Begin by peeling the garlic cloves and chopping them finely. Set aside.

Step 2

Slice the bird's eye chilies thinly and combine them with the chopped garlic.

Step 3

Heat a large pan or wok over medium-high heat and add the vegetable oil.

Step 4

When the oil is hot, add the chopped garlic and chilies. Stir-fry for about 30 seconds until fragrant.

Step 5

Add the ground chicken (or pork) to the pan. Break it up with a spatula while stir-frying, and cook until no longer pink.

Step 6

In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, and brown sugar. Stir until the sugar dissolves.

Step 7

Pour this sauce mixture over the cooked meat and stir well to coat evenly.

Step 8

Add the water to the pan and continue to stir-fry for another 2-3 minutes to let the flavors meld together.

Step 9

Turn off the heat and add the holy basil leaves. Stir until the basil is wilted and incorporated into the dish.

Step 10

In a separate non-stick pan, fry the eggs sunny side up to your preferred doneness.

Step 11

Serve the Pad Krapow hot with jasmine rice and a fried egg on top of each serving.
