Ingredients

  • 300 grams ground chicken (or pork/beef)
  • 1 cup Thai basil leaves
  • 2 tablespoons vegetable oil
  • 4 pieces garlic cloves
  • 2 pieces red chilies (Thai bird's eye or similar)
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon sugar
  • 2 tablespoons water
  • 2 cups steamed jasmine rice (for serving)
  • 1 piece egg (optional, for serving)

Directions

Step 1

Peel the garlic cloves and finely chop them. Slice the red chilies into thin pieces. Adjust the number of chilies according to your preferred heat level.

Step 2

Heat a wok or skillet over medium-high heat. Add the vegetable oil and swirl to coat the pan.

Step 3

Add the chopped garlic and chili slices to the hot oil. Stir-fry for 30 seconds until aromatic, being careful not to burn the garlic.

Step 4

Increase the heat to high and add the ground chicken. Stir-fry, breaking up the meat with a spatula, until it is cooked through and no longer pink (about 5–6 minutes).

Step 5

Add the oyster sauce, soy sauce, fish sauce, and sugar to the pan. Stir to coat the meat evenly.

Step 6

Pour in the water and stir-fry for another 1–2 minutes to combine all the flavors.

Step 7

Turn off the heat and add the Thai basil leaves. Toss them into the hot stir-fried meat until they wilt slightly.

Step 8

Serve the Pad Ga Pow over steamed jasmine rice. Optionally, top with a fried egg for an authentic touch.
