  • 12 oz fettuccine pasta
  • 1 lb salmon fillet (skinless)

  • 3 tbsp soy sauce

  • 2 tbsp lime juice
  • 1 tsp ginger (grated)
  • 2 garlic cloves (minced)
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup parmesan cheese (grated)
  • 0.5 tsp salt
  • 0.25 tsp black pepper (freshly ground)
  • 2 green onions (sliced)
  • 2 tbsp cilantro leaves (chopped)
  • 4 lime wedges (for serving)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the fettuccine pasta according to package instructions. Reserve 1/2 cup of pasta water before draining. Set the pasta aside.

Step 2

Cut the salmon fillet into 4 equal portions. In a small bowl, whisk together soy sauce, honey, lime juice, grated ginger, and half of the minced garlic.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 2-3 minutes on each side, until they are golden and cooked through. Remove the salmon from the skillet and set aside.

Reduce the heat to medium and add the remaining olive oil to the skillet. Add the remaining minced garlic and sauté for 30 seconds until fragrant.

Toss the cooked fettuccine into the skillet with the sauce, ensuring that the pasta is evenly coated. If the sauce is too thick, add reserved pasta water, one tablespoon at a time, until desired consistency is achieved.

Return the salmon fillets to the skillet, placing them on top of the pasta. Sprinkle green onions and cilantro over the dish.
