  • 1 tablespoon brown sugar
  • 8 ounces rice noodles
  • 1 cup shiitake mushrooms
  • 2 heads baby bok choy
  • 2 medium carrots
  • 4 stalks scallions
  • 0.5 cup cilantro leaves
  • 1 red chili (optional)

Directions

Step 1

Thinly slice the pork loin into bite-sized pieces and marinate it with 1 tablespoon soy sauce and 1/2 tablespoon grated ginger. Let it sit for 10 minutes.

Step 2

Mince the garlic, grate the remaining ginger, and slice the scallions, shiitake mushrooms, baby bok choy, and carrots. If using red chili, thinly slice it as well.

Step 3

Heat the vegetable oil in a large pot over medium-high heat. Add the marinated pork slices and sauté until browned on all sides. Remove the pork and set aside.

In the same pot, add the garlic and remaining grated ginger. Sauté for 1 minute until fragrant.
