Thinly slice the pork loin into bite-sized pieces and marinate it with 1 tablespoon soy sauce and 1/2 tablespoon grated ginger. Let it sit for 10 minutes.
Mince the garlic, grate the remaining ginger, and slice the scallions, shiitake mushrooms, baby bok choy, and carrots. If using red chili, thinly slice it as well.
Heat the vegetable oil in a large pot over medium-high heat. Add the marinated pork slices and sauté until browned on all sides. Remove the pork and set aside.
In the same pot, add the garlic and remaining grated ginger. Sauté for 1 minute until fragrant.
Pour in the chicken broth, fish sauce, lime juice, brown sugar, and the remaining 2 tablespoons of soy sauce. Stir to combine and bring the mixture to a simmer.
Add the sliced shiitake mushrooms, carrots, and bok choy to the pot. Simmer for 7-8 minutes until the vegetables are tender.
While the soup simmers, prepare the rice noodles according to the package instructions. Drain and set aside.
Return the pork slices to the pot and simmer for another 2-3 minutes to heat through.
To serve, divide the cooked rice noodles among bowls and ladle the soup over them. Top with sliced scallions, cilantro leaves, and red chili (if desired) for garnish.
Serve hot with lime wedges on the side for an extra pop of citrus.
