Ingredients

  • 300 grams Spinach (fresh)
  • 200 grams Paneer
  • 1 piece Onion (medium, finely chopped)
  • 1 piece Tomato (medium, finely chopped)
  • 4 pieces Garlic cloves (finely chopped)
  • 1 teaspoon Ginger (grated)
  • 1 piece Green chili (optional, finely chopped)
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Kasuri methi (dried fenugreek leaves)
  • 2 tablespoons Cream
  • 2 tablespoons Cooking oil
  • 1 to taste Salt
  • 0 as needed Water

Directions

Step 1

Wash the spinach leaves thoroughly under running water to remove any grit or dirt.

Step 2

Boil water in a large pot and blanch the spinach for 2-3 minutes. Immediately transfer the spinach to a bowl of ice water to retain its vibrant green color.

Once cooled, drain the spinach and blend it into a smooth puree using a blender or food processor. Set aside.

Cut the paneer into bite-sized cubes and set them aside.

Heat 2 tablespoons of cooking oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
