Ingredients

  • 1 liters Full-fat milk
  • 50 grams Raw rice (preferably short-grain like Sona Masoori or Jeerakasala)
  • 100 grams Sugar
  • 4 pods Cardamom pods
  • 1 tablespoons Ghee (clarified butter)
  • 10 pieces Cashews
  • 1 tablespoons Raisins

Directions

Step 1

Rinse the rice thoroughly under cold water until the water runs clear, and set aside.

Step 2

In a large, heavy-bottomed pot or deep pan, heat the milk over medium heat. Stir occasionally to prevent it from sticking to the bottom or forming a skin.

Step 3

Add the washed rice to the milk and reduce the heat to low. Stir well to ensure the rice does not clump together.

Step 4

Cook the rice in the milk on low heat, stirring frequently. Allow the mixture to simmer and thicken over 40-50 minutes, or until the rice is completely cooked and the milk has reduced and taken on a creamy consistency.

Lightly crush the cardamom pods to release their flavor, then add them to the mixture.

Stir in the sugar and simmer for another 10-15 minutes until the sugar dissolves completely and is well incorporated.
