Ingredients

  • 200 grams Rice noodles
  • 300 grams Shrimp, peeled and deveined
  • 2 large Eggs
  • 100 grams Bean sprouts
  • 3 cloves Garlic, minced
  • 3 stalks Green onions, sliced
  • 50 grams Roasted peanuts, chopped
  • 1 Lime, cut into wedges
  • 3 tablespoons Cooking oil
  • 3 tablespoons Fish sauce
  • 2 tablespoons Tamarind paste
  • 1.5 tablespoons Palm sugar (or brown sugar)
  • 1 tablespoon Soy sauce
  • 0.5 teaspoon Red chili flakes
  • 2 tablespoons Water

Directions

Step 1

Soak the rice noodles in warm water for 20-30 minutes or until softened. Drain and set aside.

Step 2

In a small bowl, whisk together the fish sauce, tamarind paste, palm sugar, soy sauce, red chili flakes, and water to create the Pad Thai sauce. Set aside.

Step 3

Heat 1 tablespoon of cooking oil in a large wok or skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they are pink and cooked through. Remove the shrimp and set aside.

Step 4

Add another tablespoon of oil to the wok. Crack the eggs directly into the wok and scramble them quickly using a spatula. Push the eggs to one side of the wok.

Step 5

Add the remaining tablespoon of oil and the minced garlic to the other side of the wok. Stir-fry the garlic for about 30 seconds or until fragrant.

Step 6

Add the soaked and drained rice noodles to the wok along with the prepared Pad Thai sauce. Toss everything together to evenly coat the noodles in the sauce.

Step 7

Return the cooked shrimp to the wok, along with the bean sprouts and sliced green onions. Stir-fry for 2-3 minutes until everything is heated through and well combined.

Step 8

Transfer the Pad Thai to serving plates. Garnish with chopped peanuts and lime wedges on the side.
