Ingredients

  • 2 lbs ground beef
  • 1 large yellow onion
  • 1 medium green bell pepper
  • 4 cloves minced garlic
  • 28 oz diced tomatoes (undrained)
  • 16 oz tomato sauce
  • 15 oz kidney beans (drained and rinsed)
  • 15 oz pinto beans (drained and rinsed)
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 0.5 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 1 cup beef broth
  • 1 tbsp olive oil
  • 1 assorted optional toppings (shredded cheese, sour cream, chopped green onions, jalapeño slices)

Directions

Step 1

Heat a large Dutch oven or soup pot over medium-high heat. Add the olive oil and swirl to coat the bottom.

Step 2

Add the ground beef to the pot and cook, breaking it up with a wooden spoon, until browned and fully cooked. Drain excess grease if needed.

Step 3

Dice the onion and green bell pepper. Add them to the pot along with the minced garlic. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened and fragrant.

Step 4

Stir in the chili powder, ground cumin, paprika, dried oregano, cayenne pepper, salt, and black pepper. Let the spices toast for 1-2 minutes to deepen the flavor.

Step 5

Pour in the diced tomatoes (with their juices), tomato sauce, and beef broth. Stir to combine.

Step 6

Add the kidney beans and pinto beans to the pot, stirring gently to incorporate.

Step 7

Bring the chili to a simmer, then reduce the heat to low. Cover and let it cook for 60-75 minutes, stirring occasionally to prevent sticking.

Step 8

Taste the chili and adjust seasoning as needed. Add more chili powder or cayenne pepper if you prefer extra heat.

Step 9

Serve hot in bowls and top with shredded cheese, sour cream, chopped green onions, or jalapeño slices as desired.
