Ingredients

  • 8 oz bow tie pasta (farfalle)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 3 cups baby spinach, chopped
  • 1 cup Parmesan cheese, grated
  • 0.5 cup heavy cream
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the bow tie pasta according to the package instructions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.

Step 2

In a large skillet, melt the butter with the olive oil over medium heat.

Step 3

Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 4

Stir in the chopped baby spinach and cook for 2-3 minutes until wilted.

Step 5

Reduce the heat to low and stir in the heavy cream, salt, black pepper, and red pepper flakes (if using). Let it simmer for 1-2 minutes.

Step 6

Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, gradually stir in the reserved pasta water until the desired consistency is reached.

Step 7

Remove the skillet from heat and stir in the grated Parmesan cheese until well combined. Taste and adjust seasoning if needed.

Step 8

Garnish with fresh parsley, if desired, and serve immediately. Enjoy!
