Ingredients

  • 1 pound large shrimp (peeled and deveined)
  • 0.25 pound ground pork
  • 1.5 cups chicken broth
  • 1.5 tablespoons dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 2 large eggs (beaten)
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh ginger (minced)
  • 2 green onions (chopped)
  • 0.33 cup frozen peas (optional)
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 0.25 teaspoon white pepper
  • 0.25 teaspoon salt (to taste)

Directions

Step 1

In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry, and set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the ground pork and cook, stirring frequently, until no longer pink. Remove and set aside.

Step 3

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the minced garlic and ginger, and cook until fragrant, about 30 seconds.

Step 4

Add the shrimp to the skillet and stir-fry for 1-2 minutes until they begin to turn pink. Remove the shrimp from the skillet and set aside.

Step 5

Return the ground pork to the skillet and pour in the chicken broth. Add the dark soy sauce, oyster sauce, and sesame oil. Stir to combine and bring the mixture to a simmer.

Step 6

Reduce the heat to medium and slowly stir in the cornstarch slurry. Continue stirring until the sauce begins to thicken, about 1 minute.

Step 7

Slowly drizzle the beaten eggs into the skillet in a circular motion while stirring gently with a fork to create ribbons in the sauce.

Step 8

Add the shrimp back to the skillet, along with the peas (if using) and white pepper. Cook for 1-2 minutes, or until the shrimp are fully cooked and the peas are heated through.

Step 9

Season with salt to taste, and garnish with chopped green onions before serving. Serve hot over steamed rice or noodles.
