Ingredients

  • 2 tablespoons Vegetable oil
  • 1 pound Ground chicken
  • 1 cup Water chestnuts (chopped)
  • 1 cup Mushrooms (diced)
  • 2 tablespoons Green onions (chopped)
  • 2 cloves Garlic (minced)
  • 3 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Hoisin sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Sriracha sauce (optional, for heat)
  • 1 head Iceberg or butter lettuce leaves

Directions

Step 1

Heat a large skillet or wok over medium-high heat and add the vegetable oil.

Step 2

Add the ground chicken to the skillet. Cook and crumble the chicken until it is fully cooked and no longer pink, about 5-7 minutes.

Step 3

Reduce the heat to medium and stir in the chopped water chestnuts, diced mushrooms, green onions, and minced garlic. Cook for an additional 3-4 minutes, until the vegetables are tender.

Step 4

In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, hoisin sauce, sesame oil, and sriracha sauce (if using).

Step 5

Pour the sauce mixture into the skillet with the chicken and vegetables. Stir well to coat everything evenly. Allow it to simmer for 2-3 minutes so the flavors meld together.

Step 6

Remove the skillet from heat and let the filling cool slightly.

Step 7

Carefully separate the lettuce leaves from the head of lettuce, preserving them as cups for the filling.

Step 8

Spoon the chicken and vegetable mixture into the center of each lettuce leaf cup.

Step 9

Serve immediately and allow diners to wrap the lettuce around the filling to enjoy.
