Ingredients

  • 8 oz Wide rice noodles
  • 1 lb Boneless, skinless chicken breasts
  • 2 tbsp Cornstarch
  • 3 tbsp Low-sodium soy sauce
  • 2 tbsp Vegetable oil
  • 3 cloves Garlic cloves, minced
  • 1 tbsp Fresh ginger, grated
  • 1 tbsp Red chili paste (such as Sambal Oelek)
  • 2 tbsp Hoisin sauce
  • 1 tsp Rice vinegar
  • 1 tsp Sesame oil
  • 1 large Yellow onion, thinly sliced
  • 1 medium Red bell pepper, julienned
  • 1 cup Snow peas, trimmed
  • 2 stalks Green onions, chopped
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Cook the rice noodles according to the package instructions. Drain, rinse with cold water, and set aside.

Step 2

Thinly slice the chicken into bite-sized strips. In a medium bowl, mix the chicken with 1 tablespoon of soy sauce and 2 tablespoons of cornstarch. Let marinate for 10 minutes.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry for 4-5 minutes until cooked through. Remove the chicken and set aside.
