Finely chop the shrimp until it forms a paste-like consistency, or use a food processor for a smoother texture.
In a mixing bowl, combine the shrimp paste, ground pork, minced garlic, grated ginger, chopped green onions, soy sauce, sesame oil, and cornstarch. Mix well to create the filling.
Place a wonton wrapper on a clean, flat surface. Spoon about 1 teaspoon of the filling into the center of the wrapper.
Dip your finger into water and run it along the edges of the wonton wrapper. Fold the wrapper in half diagonally to form a triangle and press the edges tightly to seal. Optionally, pleat the edges for a more decorative finish. Repeat with the remaining wrappers and filling.
Heat the vegetable oil in a large skillet over medium heat. Arrange the dumplings in the skillet in a single layer, leaving space between each piece. Cook until the bottoms are golden brown, about 2-3 minutes.
Add 100 milliliters of water to the skillet and quickly cover with a lid to steam the dumplings. Cook for an additional 5-6 minutes, or until the water has completely evaporated and the dumplings are cooked through.
Remove the lid and allow the dumplings to crisp up slightly on the bottom again for about 1 minute.
Serve the dumplings hot with your favorite dipping sauce, such as soy sauce, chili oil, or a mixture of soy sauce and rice vinegar.
