Ingredients

  • 1 pound Ground chicken
  • 2 tablespoons Vegetable oil
  • 0.5 cup Minced water chestnuts
  • 0.5 cup Chopped white mushrooms
  • 2 tablespoons Minced green onions
  • 1 teaspoon Minced garlic
  • 3 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 1 tablespoon Rice wine vinegar
  • 2 tablespoons Hoisin sauce
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Ground ginger
  • 1 teaspoon Sriracha or chili garlic sauce (optional, for heat)
  • 8 pieces Iceberg or butter lettuce leaves

Directions

Step 1

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Step 2

Add the ground chicken to the skillet and cook until browned, breaking it up with a wooden spoon as it cooks. This will take about 5-6 minutes.

Step 3

Once the chicken is fully cooked, drain any excess fat from the skillet.

Step 4

Add the water chestnuts, mushrooms, green onions, and garlic to the skillet. Stir and cook for an additional 2-3 minutes, until the vegetables are softened.

Step 5

In a small bowl, whisk together the soy sauce, brown sugar, rice wine vinegar, hoisin sauce, sesame oil, ground ginger, and Sriracha (if using).

Step 6

Pour the sauce into the skillet with the chicken and vegetable mixture. Stir well to combine and cook for 1-2 minutes, ensuring everything is well-coated and heated through.

Step 7

Remove the skillet from the heat and transfer the chicken mixture to a serving dish.

Step 8

To serve, spoon a portion of the chicken mixture into individual lettuce leaves. Wrap the lettuce around the filling to form a bundle and enjoy!
