  • 1 lb Beef flank steak
  • 0.5 cup Cornstarch
  • 0.5 cup Vegetable oil
  • 3 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 6 Dry red chilies
  • 0.25 cup Soy sauce
  • 2 tbsp Hoisin sauce
  • 1.5 tbsp Rice vinegar
  • 2 tbsp Brown sugar
  • 1 tsp Sichuan peppercorns, toasted and ground
  • 3 Scallions, sliced
  • 1 tsp Sesame oil

Directions

Step 1

Slice the beef flank steak into thin strips. Place the beef in a bowl and toss with cornstarch until fully coated. Set aside for 10 minutes.

Step 2

Heat the vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, fry the beef strips in batches until crispy and golden, about 2-3 minutes per batch. Remove the beef and set it aside on a plate lined with paper towels.

In the same skillet, remove excess oil, leaving about 2 tablespoons. Add the minced garlic, ginger, and dry red chilies. Stir-fry for 1-2 minutes until aromatic.
