  • 3 stalks celery stalks, sliced
  • 2 medium zucchini, diced
  • 1 cup green beans, trimmed and halved
  • 6 cups low-sodium vegetable broth
  • 1 14-ounce can diced tomatoes (no salt added), with juice
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Add the carrots and celery to the pot, and sauté for 5 minutes to slightly soften the vegetables.
