Ingredients

  • 250 grams fresh oysters (shucked)
  • 1 cup water
  • 3 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons granulated sugar
  • 1.5 teaspoons cornstarch
  • 2 tablespoons water (for cornstarch slurry)

Directions

Step 1

In a medium-sized saucepan, combine the shucked oysters and 1 cup of water. Bring to a gentle simmer over medium heat.

Step 2

Simmer the mixture for about 10 minutes, stirring occasionally, until the oysters are soft and the liquid becomes flavorful.

Step 3

Using a fine mesh sieve or cheesecloth, strain the oyster liquid into a bowl. Press gently on the oysters to extract as much liquid as possible, then discard the solids.

Step 4

Return the strained liquid to the saucepan and set it over medium-low heat.

Step 5

Stir in the soy sauce, dark soy sauce, and granulated sugar. Cook for 5 minutes, stirring frequently, until the sugar fully dissolves and the mixture begins to thicken slightly.

Step 6

In a small bowl, mix the cornstarch and 2 tablespoons of water to create a smooth slurry.

Step 7

Slowly pour the cornstarch slurry into the saucepan while continuously stirring. Cook for another 5 minutes, or until the sauce thickens to your desired consistency.

Step 8

Remove the saucepan from heat and let the oyster sauce cool to room temperature.

Step 9

Transfer the cooled oyster sauce to a clean, airtight jar or container. Store in the refrigerator for up to 2 weeks.
