Ingredients

  • 2 medium, finely chopped Shallots
  • 1 teaspoon Dry mustard powder
  • 120 ml White wine vinegar
  • 1 tablespoon Caster sugar
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground cloves
  • 0.25 teaspoon Cayenne pepper
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Lemon zest
  • 1 teaspoon Orange zest
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 60 ml Water

Directions

Step 1

In a small saucepan, combine the finely chopped shallots, dry mustard powder, white wine vinegar, caster sugar, ground ginger, ground cloves, and cayenne pepper. Stir well to combine.

Step 2

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to dissolve the sugar completely.

Step 3

Once the mixture is simmering, reduce the heat to low and cook for about 5 minutes, allowing the flavors to meld.

Step 4

Remove the saucepan from the heat and stir in the Dijon mustard, lemon zest, orange zest, salt, black pepper, and water. Stir until the sauce is smooth.

Step 5

Let the Oxford Sauce cool to room temperature before serving, or store it in a sterilized jar in the refrigerator for up to 2 weeks.

Step 6

Serve as a condiment with cold meats, cheeses, or grilled dishes for a flavorful accompaniment.
