Ingredients

  • 500 grams daikon radish
  • 2 teaspoons salt
  • 120 milliliters white vinegar
  • 120 milliliters water
  • 50 grams sugar
  • 2 cloves garlic cloves
  • 2 pieces dried red chili peppers (optional)

Directions

Step 1

Peel the daikon radish and cut it into thin slices or matchsticks, depending on your preference.

Step 2

Place the daikon radish pieces in a large bowl and sprinkle with salt. Toss to coat evenly and let sit for 10 minutes to draw out excess moisture.

Step 3

Meanwhile, in a small saucepan, combine white vinegar, water, and sugar. Heat over medium heat and stir until the sugar is fully dissolved. Remove from heat and allow the mixture to cool to room temperature.

Step 4

Peel the garlic cloves and slice them thinly. If using dried red chili peppers, break them into smaller pieces.

Step 5

Drain the liquid released from the salted daikon radish and lightly rinse the radish under cool water. Pat dry with a clean kitchen towel or paper towel.

Step 6

Transfer the daikon radish into a clean glass jar or airtight container. Add the sliced garlic and dried red chili peppers (if using).

Step 7

Pour the cooled vinegar solution over the daikon radish until all the pieces are fully submerged.

Step 8

Seal the jar or container tightly and refrigerate overnight to allow the flavors to develop.

Step 9

Serve chilled as a refreshing side dish or condiment. Store the pickles in the refrigerator for up to one week.
