Ingredients

  • 4 pieces (6-8 ounces each) salmon fillets (skinless)
  • 1 whole (sliced into rounds) lemon
  • 6 sprigs fresh dill
  • 1 cup dry white wine
  • 1 cup low-sodium vegetable or fish stock
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 2 tablespoons (chopped) fresh dill (for sauce)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lightly grease a large baking dish that can hold the salmon fillets in a single layer.

Step 3

Arrange the salmon fillets in the baking dish, leaving a bit of space between each piece.

Step 4

Place lemon slices and dill sprigs over and around the salmon fillets to infuse flavor.

Step 5

In a small saucepan, combine the dry white wine and vegetable stock. Heat over medium heat until just warmed, then pour the liquid around the salmon in the baking dish.

Step 6

Cover the baking dish tightly with aluminum foil to trap moisture and help poach the salmon. Place the dish in the oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork.

Step 7

While the salmon is cooking, prepare the dill sauce. In a small saucepan over medium heat, melt the butter.

Step 8

Stir in the heavy cream and bring the mixture to a gentle simmer. Reduce the heat to low and stir in the chopped dill, Dijon mustard, salt, and black pepper.

Step 9

Simmer the sauce for 3-5 minutes, stirring occasionally, until it slightly thickens.

Step 10

Once the salmon is cooked, carefully remove it from the baking dish and transfer to serving plates.

Step 11

Spoon the dill sauce over each fillet and garnish with additional fresh dill if desired.

Step 12

Serve immediately with your favorite side dishes, such as roasted vegetables or rice.
