  • 0.5 cup Cherry tomatoes, diced
  • 0.25 cup Red onion, finely chopped
  • 2 tablespoons Cilantro, chopped
  • 1 small Jalapeño, seeded and finely chopped
  • 1 tablespoon Lime juice (freshly squeezed)
  • 0.5 teaspoon Cumin
  • 0.25 teaspoon Salt (for salsa)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly brush it with olive oil to prevent sticking.
