Ingredients

  • 6 pieces bone-in, skin-on chicken thighs
  • 1 cup Panko breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 as needed olive oil spray
  • 1 as needed nonstick cooking spray

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top. Spray the rack lightly with nonstick cooking spray.

Step 2

In a shallow dish, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, dried Italian seasoning, salt, and black pepper. Mix thoroughly.

Step 3

In another shallow dish, whisk the eggs until smooth.

Step 4

In a third shallow dish, place the all-purpose flour.

Step 5

Pat the chicken thighs dry with paper towels.

Step 6

Dredge each chicken thigh first in the flour, shaking off any excess. Then dip it into the eggs, ensuring it’s completely coated. Finally, press it into the Panko-Parmesan mixture, coating evenly on all sides. Place the coated chicken thighs on the prepared wire rack.

Step 7

Lightly spray the tops of the chicken thighs with olive oil spray to enhance crispiness.

Step 8

Bake the chicken thighs in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the coating is golden brown and crunchy.

Step 9

Remove from the oven and let the chicken rest for 5 minutes before serving.

Step 10

Serve warm with your choice of sides, such as mashed potatoes, coleslaw, or a crisp green salad.
