Ingredients

  • 2.5 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 0.5 teaspoons Salt
  • 1 cup Cold unsalted butter (cubed)
  • 8 tablespoons Ice water
  • 3 cups Apples (peeled, cored, and diced)
  • 0.5 cups Brown sugar
  • 1 teaspoons Ground cinnamon
  • 0.25 teaspoons Nutmeg
  • 2 teaspoons Cornstarch
  • 2 tablespoons Water
  • 1 piece Egg (beaten for egg wash)
  • 1 tablespoon Milk
  • 2 tablespoons Granulated sugar (for sprinkling)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt.

Step 2

Add the cold cubed butter to the dry ingredients and use a pastry cutter or your fingers to work the butter into the flour until it resembles small peas.

Step 3

Add ice water, 1 tablespoon at a time, mixing gently after each addition until the dough comes together. Do not overwork the dough. Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 30 minutes.

Step 4

Meanwhile, prepare the apple filling: in a medium saucepan over medium heat, combine the diced apples, brown sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until the apples are tender, about 5-7 minutes.

Step 5

In a small bowl, mix the cornstarch and water to make a slurry. Add the slurry to the apple mixture and cook for 1-2 minutes, stirring constantly, until thickened. Remove from heat and let the filling cool completely.

Step 6

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 7

On a floured surface, roll out one chilled dough disc to about 1/8-inch thickness. Cut out circles using a 4-5 inch round cutter.

Step 8

Place about 1-2 tablespoons of the cooled apple filling in the center of each circle. Fold the dough over the filling to create a half-moon shape. Press the edges together with your fingers and seal with the tines of a fork.

Step 9

Place the prepared pies on the lined baking sheets. In a small bowl, whisk together the beaten egg and milk for the egg wash, then brush each pie lightly with the mixture. Sprinkle with granulated sugar.

Step 10

Using a paring knife, cut small slits on the top of each pie to allow steam to escape.

Step 11

Bake in the preheated oven for 20-25 minutes or until the pies are golden brown and flaky.

Step 12

Allow the pies to cool on a wire rack for a few minutes before serving. Enjoy warm or at room temperature.
