  • 2 cups beef broth
  • 1 large yellow onion
  • 4 medium carrots
  • 4 medium potatoes
  • 4 whole garlic cloves
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Pat the chuck roast dry with paper towels to ensure a good sear. Rub it thoroughly with kosher salt, black pepper, garlic powder, onion powder, paprika, and dried thyme.

Heat a large oven-safe Dutch oven or skillet over medium-high heat. Add olive oil and sear the roast on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.
