Ingredients

  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 0.5 cup Barbecue sauce
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Smoked paprika
  • 0.25 teaspoon Cayenne pepper
  • 1 unit Large sweet potato, peeled and cubed
  • 2 cups Chicken broth
  • 1 cup Whole milk
  • 1 cup Quick-cooking grits
  • 1 teaspoon Salt
  • 2 tablespoons Butter
  • 0.25 cup Grated Parmesan cheese
  • 2 tablespoons Chopped green onions

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium-sized bowl, combine the olive oil, barbecue sauce, garlic powder, smoked paprika, and cayenne pepper. Add the shrimp and toss to coat evenly. Set aside to marinate while preparing the grits.

Step 3

Place the cubed sweet potato in a medium saucepan and cover with water. Bring to a boil and cook for about 10 minutes, or until the sweet potato is fork-tender. Drain and mash until smooth. Set aside.

Step 4

In the same saucepan, bring the chicken broth, milk, and salt to a gentle boil over medium heat.

Step 5

Slowly whisk in the grits and reduce the heat to low. Stir frequently, cooking for about 5 minutes, or until the grits thicken.

Step 6

Stir in the mashed sweet potato, butter, and Parmesan cheese until fully combined and creamy. Adjust salt to taste. Cover and keep warm.

Step 7

Spread the marinated shrimp in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 8–10 minutes, or until the shrimp are pink and opaque.

Step 8

To serve, divide the sweet potato grits among four plates or bowls. Top each portion with the barbecue shrimp and garnish with chopped green onions. Serve immediately.
