  • 10 pieces Corn tortillas
  • 2 cups Shredded Mexican cheese blend
  • 2 cups Red enchilada sauce
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Sour cream (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
