Ingredients

  • 2 pieces Ribeye steak (1-inch thick)
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 cloves Garlic (minced)
  • 2 tablespoons Dijon mustard
  • 0.5 cup Heavy cream
  • 0.25 cup Beef broth
  • 2 sprigs Fresh thyme (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the ribeye steaks dry with a paper towel. Season both sides generously with salt and ground black pepper.

Step 3

Heat an oven-safe skillet over medium-high heat and add the olive oil.

Step 4

Sear the steaks for 2-3 minutes on each side until a nice crust forms.

Step 5

Transfer the skillet with the steaks to the preheated oven. Bake for 5-7 minutes for medium-rare, or longer if desired. Use a meat thermometer to ensure the internal temperature reaches your preferred doneness (130°F/54°C for medium-rare).

Step 6

Remove the steaks from the skillet and transfer them to a plate. Cover with aluminum foil to rest while preparing the mustard sauce.

Step 7

Return the skillet to medium heat and add the butter. Once melted, add the minced garlic and sauté for 30 seconds until fragrant.

Step 8

Stir in the Dijon mustard, heavy cream, and beef broth, scraping up any browned bits from the bottom of the skillet.

Step 9

Simmer the sauce for 3-5 minutes until slightly thickened, stirring occasionally.

Step 10

Taste and adjust seasoning if needed.

Step 11

Place the rested steaks onto serving plates and spoon the mustard sauce generously over the top.

Step 12

Garnish with fresh thyme if desired and serve immediately.
