Ingredients

  • 4 pieces (6 oz each) Mahi Mahi fillets
  • 6 sheets (crushed into fine crumbs) Graham crackers
  • 0.25 cups Fresh orange juice
  • 1 teaspoons Orange zest
  • 2 tablespoons Honey
  • 2 tablespoons (melted) Unsalted butter
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoons Olive oil
  • 2 tablespoons (chopped, for garnish) Fresh parsley

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

In a small bowl, combine the fresh orange juice, orange zest, honey, and melted butter. Whisk until well mixed. Set aside.

Step 3

In another bowl, mix the crushed graham crackers, garlic powder, salt, and black pepper to create the crust mixture.

Step 4

Pat the mahi-mahi fillets dry with a paper towel and brush each piece lightly with olive oil on both sides. Place the fillets on the prepared baking sheet.

Step 5

Spoon the orange mixture evenly over the top of each fillet, allowing it to coat the surface generously.

Step 6

Sprinkle the graham cracker crust mixture on top of the orange-coated fillets, pressing gently to adhere the crust.

Step 7

Place the baking sheet in the preheated oven and bake for 18-20 minutes, or until the crust is golden and the fish flakes easily with a fork.

Step 8

Remove the mahi-mahi from the oven, garnish with fresh parsley, and serve immediately.
