Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 0.5 cup cooked bacon, crumbled
  • 2 stalks green onions, sliced
  • 0.5 cup sour cream (optional, for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with non-stick spray.

Step 2

Scrub the potatoes thoroughly to remove dirt, then pat them dry with a kitchen towel.

Step 3

Pierce each potato a few times with a fork and place them directly on the oven rack. Bake for 35-40 minutes, or until they are tender when pierced with a knife.

Step 4

Remove the potatoes from the oven and let them cool until they are comfortable to handle, about 10-15 minutes.

Step 5

Slice each potato lengthwise in half and carefully scoop out most of the flesh, leaving about 1/4 inch of potato attached to the skin. Save the scooped-out potato flesh for another recipe, like mashed potatoes or potato soup.

Turn the oven up to 425°F (220°C).

Brush the inside and outside of the potato skins with olive oil, then sprinkle them with garlic powder, paprika, salt, and black pepper.

Place the potato skins cut side down on the prepared baking sheet and bake for 10 minutes. Flip them over and bake for another 5-7 minutes, or until the edges are crispy and golden brown.

Remove the potato skins from the oven and sprinkle the inside of each with shredded cheddar cheese and crumbled bacon. Return to the oven for 3-5 minutes, or until the cheese is melted and bubbly.

Step 10

Garnish with sliced green onions and serve warm, with sour cream on the side for dipping if desired.
