Ingredients

  • 2 pounds Large shrimp (peeled, deveined, tail-on)
  • 1 pound Red potatoes
  • 4 ears Corn on the cob (halved)
  • 12 ounces Smoked andouille sausage (sliced into 1-inch pieces)
  • 4 tablespoons Butter
  • 4 cloves Garlic cloves (minced)
  • 0.25 cup Seafood boil seasoning
  • 1 teaspoon Cayenne pepper
  • 2 teaspoons Paprika
  • 1 teaspoon Black pepper
  • 1 large Lemon (cut into wedges)
  • 3 leaves Bay leaves
  • 2 tablespoons Kosher salt
  • 12 cups Water
  • 0.25 cup Parsley (chopped, for garnish)

Directions

Step 1

In a large stockpot, combine 12 cups of water, kosher salt, bay leaves, seafood boil seasoning, cayenne pepper, and paprika. Bring the mixture to a rolling boil over medium-high heat.

Step 2

Add the red potatoes to the seasoned boiling water. Cook for 10-12 minutes, or until the potatoes are just tender when pierced with a fork.

Step 3

Add the halved corn on the cob and the sliced andouille sausage to the pot. Boil for an additional 5-7 minutes, or until the corn is bright yellow and tender.

Step 4

Melt the butter in a small saucepan over low heat. Stir in the minced garlic and black pepper. Cook for 2-3 minutes, stirring frequently to ensure the garlic doesn’t burn. Remove from heat and set aside.

Step 5

Add the shrimp to the pot. Cook for 3-4 minutes, or until the shrimp turn pink and opaque. Be careful not to overcook the shrimp.

Step 6

Drain the contents of the pot into a large colander. Discard the bay leaves.

Step 7

Transfer the shrimp, potatoes, corn, and sausage to a large serving platter or a newspaper-lined table for a rustic feel.

Step 8

Drizzle the garlic butter mixture over the cooked ingredients, ensuring an even coating.

Step 9

Sprinkle with chopped parsley for a fresh pop of color and added flavor.

Step 10

Serve immediately with lemon wedges on the side for squeezing over the boil. Enjoy the Outerbanks Pepper Spicy Shrimp Boil with friends and family!
