Ingredients

  • 4 tablespoons Butter
  • 2 medium-sized, thinly sliced Yellow onions
  • 0.25 cup All-purpose flour
  • 3 cups Chicken broth
  • 3 cups Whole milk
  • 1 cup, shredded or diced American cheese
  • 1 cup, shredded Cheddar cheese
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped parsley (optional, for garnish)

Directions

Step 1

In a large pot, melt the butter over medium heat.

Step 2

Add the thinly sliced onions to the pot and saute for 10-12 minutes until they are soft and translucent. Stir occasionally to prevent burning.

Step 3

Sprinkle the flour over the onions and stir to combine. Cook for 2-3 minutes to remove the raw flour taste.

Step 4

Gradually pour in the chicken broth while stirring to prevent lumps. Cook for 5 minutes to allow the mixture to thicken slightly.

Step 5

Pour in the whole milk and stir. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.

Step 6

Add the shredded American cheese and cheddar cheese, stirring constantly until the cheese has melted and the soup is smooth and creamy.

Step 7

Season the soup with salt and black pepper. Taste and adjust seasoning if needed.

Step 8

Simmer the soup on low heat for an additional 5 minutes to let the flavors meld together.

Step 9

Ladle the soup into bowls and garnish with chopped parsley, if desired. Serve hot.
