Ingredients

  • 4 large Russet potatoes
  • 6 cups Vegetable oil
  • 2 cups Cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 5 slices Bacon
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 1 cup Ranch dressing
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Wash and peel the Russet potatoes. Cut them into thin, even strips to create fries.

Step 2

Place the cut fries in a large bowl of cold water to remove excess starch. Let them soak for at least 15 minutes, then drain and pat dry with paper towels.

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Working in batches, fry the potatoes for 3-4 minutes to blanch them. They should be slightly cooked but not browned. Remove from oil and place on paper towels to drain.
