Ingredients

  • 1 whole Garlic bulb
  • 2 tablespoons Olive oil
  • 1 cup Mayonnaise
  • 1 tablespoon Lemon juice
  • 2 teaspoons Fresh parsley, finely chopped
  • 1 teaspoon Fresh thyme, finely chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the top off the garlic bulb to expose the individual cloves slightly. Place the garlic bulb on a sheet of aluminum foil.

Step 3

Drizzle 1 tablespoon of olive oil over the garlic bulb, ensuring all the cloves are lightly coated. Wrap the garlic in the foil and roast in the oven for 35-40 minutes, or until the cloves are golden and soft.

Step 4

Remove the garlic from the oven and allow it to cool. Once cool, squeeze the roasted garlic cloves out of their skins into a small bowl. Mash the garlic into a smooth paste using a fork.

Step 5

In a medium mixing bowl, combine the mashed roasted garlic, mayonnaise, lemon juice, parsley, thyme, salt, and black pepper.

Step 6

Stir the mixture thoroughly until the aioli is smooth and creamy. Taste and adjust seasoning if needed.

Step 7

Transfer the aioli to a serving dish or airtight container. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Step 8

Serve the aioli as a dip, spread, or sauce. Enjoy!
