Ingredients

  • 250 g Dried chickpeas
  • 1 tsp Baking soda
  • 1.5 L Water
  • 1 tsp Salt

Directions

Step 1

Rinse the dried chickpeas under cold running water to remove any debris or dust.

Place the chickpeas in a large bowl and cover them with plenty of water, about three times their volume. Let them soak overnight, or for at least 8-12 hours.

After soaking, drain the chickpeas and rinse them well.

Step 4

Add the soaked chickpeas to a large pot, along with 1.5 liters of water and 1 teaspoon of baking soda.

Step 5

Bring the pot to a vigorous boil over high heat, skimming off any foam or skins that rise to the surface.

Step 6

Reduce the heat to medium and let the chickpeas simmer for approximately 30-40 minutes, or until they are very tender and soft. The baking soda helps to break down the skins and speed up the cooking process.

Step 7

Once cooked, add 1 teaspoon of salt to the pot and stir. Let the chickpeas sit in the salty water for 5 minutes to absorb the flavor.
